Rose de Xinomavro from Thymiopoulos Vineyards is a gastronomic rosé wine made from Xinomavro grapes. Tomato aromas take the lead followed by those of red fruits, sweet spices and caramel. On the palate it has a beautiful tannicity, due to the barrel ageing for about 3 months. A wine with volume, fatness and acidity in balance. You can keep it for another 2-3 years. Excellent pairing with mediterrenean dishes with vegetables and pasta with tomato.

For the winery, the vineyard is the connection between the producer and nature. Their main concern is the balance in viticulture. All their vines are organically grown, following biodynamic principles. Apostolos Thimiopoulos has dedicated himself exclusively to Xinomavro, with the aim of expressing the terroir in the area of Trilofos, a village near Mount Vermio where the winery is located. Each of his wines reflects the specificity of the parcel of land from which it comes.
