Description
In the glass, it has a medium-intensity lemon color. The nose is dominated by jasmine, night-blooming jasmine, lemon, citrus, and green fruits such as apple and pear, with a subtle hint of vanilla in the background. On the palate, it is dry and full-bodied, with crisp acidity that lends freshness to the fruity and floral flavors. A subtle note from the oak barrel enhances the balance. The finish is dry and mineral, with good length.

The Santorini Cooperative Union – Santo Wines, founded in 1911, is today the island’s largest organization with 1,200 members. It protects traditional crops and produces high-quality PDO products, promoting sustainable agriculture. Its members’ vineyards yield authentic, top-quality wines. For “Nychteri,” the grapes are harvested by hand. This is followed by white vinification: destemming, 6 hours of contact with the skins at 5–6°C, and gentle pneumatic pressing. Fermentation proceeds at 16–17°C. The wine ages for 6 months in 5-metric-ton French oak tanks. Traditionally, winemakers would press the grapes at night immediately after the harvest. This is how the name “Nychteri” came about, referring to the sleepless nighttime process involved in making Santorini’s famous PDO wine.
