The Bosinakis family’s connection with the world of wine goes back to 1979. In the heart of Mantineia at an altitude of 660m they set up their own winery in 1992. Today, Sotiris and Katerina have taken over, giving all their attention to the raw material and following as a way of winemaking the long extractions. In this way they ensure as many characteristics of the variety as they can gain. Pet Nat is short for “pétillant naturel” which in French translates to “naturally sparkling” also known as méthode ancestrale. Bosinaki’s Pet Nat is from selected vineyard plots, low yielding, bottled before fermentation is complete and this makes it unpredictable. Once fermentation is complete, the bottle cap and sediment are removed and the bottle is reconstituted.
