André Beaufort Grand Cru Brut 2014 is a profiled sparkling wine with notes of citrus, yellow fruit, candied fruit, and bread crust emerging from a rich and mineral aromatic profile. On the palate it is fresh, mineral, and well structured. It reveals a rich fruit flavor and a persistent finish. A straw yellow brut nature champagne that you could pair it with warm fish appetizers, pasta with fish, fresh cheese, sushi & sashimi, fried fish, fish tartare-carpaccio, fish soup, seafood, fish soup, risotto with seafood.

The 6.5-hectare vineyards Beaufort have not been receiving any chemical treatments since 1969, when the owner Jacques decided to embrace the bio-philosophy, after discovering an allergy to synthetic compounds. In 1994 the domaine officially enters the official bio certifications. The wine-growing area includes 300 different villages or vintages, each with their own characteristics, and divided into several areas: the mountain of Reims, the Marne valley, the white coast, the Aube, and Aisne vineyards. André Beaufort Ambonnay Grand Cru Brut is an organic, biodynamic, and natural sparkling wine made by André Beaufort in the Champagne denomination (France) with the Chardonnay and Pinot Noir varieties. André Beaufort Ambonnay Grand Cru Brut comes from vines planted in a Grand Cru vineyard in Ambonnay. These are old vines, ecologically cultivated using biodynamic treatments to allow them to maintain their natural balance. The harvest is carried out manually at the optimum point of ripeness. In the winery, the André Beaufort Ambonnay Grand Cru Brut grapes are pressed and left to decant for 12 hours. Then spontaneous fermentation begins with the grape’s native yeasts in stainless steel tanks. A second fermentation then takes place in the bottle, following the Champenoise method. When it is ready, disgorgement is carried out by hand and expedition liquor based on concentrated grape juice is added. André Beaufort Ambonnay Grand Cru Brut is an innovative Grand Cru, born in the grand cru of Ambonnay and aged on the lees in bottle for 72 months but still made using the traditional Champagne method.
