Description

In the glass it has a bright yellow colour with green highlights. Delicate and intense aromas of pear, white flowers and citrus, bitter orange, with notes of mastic and fennel root. Rich and oily mouthfeel, with extremely refreshing acidity, characteristic saltiness and a delightful long finish. Cool at 10-12 °C.

Pairs perfectly with seafood, grilled vegetables, vegetable soups, grilled fish and fresh salty cheeses.

The winery was built in 1947 by the Venetsano family and was the first industrial winery on the island of Santorini. Its most distinctive feature is its structural design, which essentially used gravity, facilitating energy efficiency at a time when access to electricity was very limited.  In their vineyards they use local cultivation methods and they know very well that high quality wines start their journey from the land. For their Santorini wine they vinify Assyrtiko grapes from the “Giannas” vineyard. After a short cold maceration before fermentation, the must is transferred to steel tanks where fermentation takes place at low temperatures of 12-13 °C. Ageing in lees for a period of 4 months with light battonage.
