Nykteri is a white dry wine with a bright golden color, aromas of ripe stone fruits and citrus. It has a full mouth and an intense minerality. An Assyrtiko which you could keep it in your cellar to see how it develops. Ιt pairs nicely with mature fatty cheeses and shellfish.

Its name is a reference to the morning hours in which the harvest takes place. Hatzidakis winery collects over-matured handpicked grapes from Assyrtiko variety from selected vineyards of the island of Santorini that they are placed in a cold room overnight. Then destemmed grapes remained in skin contact for 12 hours. The must fermented with indigenous yeasts at 18˚C. The wine matured in oak barrels of different capacity for 12 months. Bottling was unfiltered in order not to lose the primary aromas of the grape.
