Dominique Belluard took over his family’s estate in Ayse, France in 1988. He expanded the vineyard plantings and concentrated on the Gringet grape, a white variety that exists only in Ayse and had almost disappeared. Over half of the world’s Gringet grapes are found in the winery’s vineyards and the rest in small neighbouring parcels. This wine comes from the highest part of their biodynamic vineyards, grown on clay and limestone soils. Mont Blanc Brut Zero is wild fermented in amphora and clay egg, a product of a traditional zero dosage method and three years on lees.
