A dry orange wine, a blend of Malagouzia and Roditis grape varieties. It has an orange color and copper hues with a slight haze. The nose has strong aromas such as nectarine, kumquat, dried peach and apricot, orange peel, cedar, honey and dried flowers. The mouth is pleasant, aromatic with soft tannins, nice acidity and a long aftertaste. You can combine it with sushi, seafood, shellfish (crabs, lobster, shrimps), Asian cuisine, white meat, fish, aged and spicy cheeses and pasta in white sauce.

The story of the Chatzivaritis Estate begins in 1994, when the first 50-acre vineyard was planted. Today the vineyard of the Chatzivaritis Estate consists of 120 acres in the area of Goumenissa. By emphasizing on the quality of the grapes, the fertility of the soil and the protection of the environment, they choose organic farming. miNimus is an orange blend of Malagouzia and Roditis grape varieties from their organic vineyards. The grapes are carefully hand selected, crushed, and allowed to go through spontaneous fermentation in clay amphora wine barrels without any additives, fining or filtration and with very low sulfur level, added before bottling. Skins remain in contact with the juice/wine for 1 month before being aged in French oak barrels for an additional period of 4 months and a further 6 months after bottling.
