Gramina is a dry white wine with a golden-yellow color and green hues. It has rich and complex aromas of ripe lemon, citrus, flint, bread, honey, jasmine, and toast. On the palate, we detect saltiness, citrus, and stone fruits. A full-bodied wine made from Assyrtiko grapes, with a balance between acidity and aromas and a long finish. You could enjoy it now or keep it for another 10 years. It pairs perfectly with grilled seafood and grilled white meat.

Vassaltis Winery is the latest addition to Santorini’s long winemaking history. Observing the vines, owner Yiannis Valambous saw the potential to create something truly exceptional and unique with the land his father left him. Gramina is made from a single 100% Assyrtiko vineyard located in the village of Vourvoulos on Santorini. The grapes are hand-harvested before dawn, and the whole clusters are pressed immediately to preserve the fruit’s freshness. The wine ages for 12 months on its lees, and some of it may be aged in barrels for a short period depending on the vintage. The result is a surprisingly elegant wine that showcases all the unique characteristics of the variety.
