Aivalis winery was founded in 1997 by Christos Aivali in Nemea. In their privately owned vineyards, covering a total area of 35 acres, they cultivate low-yield grapes with the aim of producing high-quality wines. The estate supports the philosophy of non-intensive agriculture, with almost zero fertilization, so that the root system searches deep into the soil for food and moisture. Wine production is carried out without any industrial intervention; the wines are not stabilized or filtered, thus retaining their authenticity and unique character.
