Ktima Biblia Chora, is located in the village of Kokkinochori, Kavala, in Northern Greece. It was established by the oenologists Vassilis Tsaktsarlis and Vangelis Gerovassiliou who in 1998, planted the first organic vineyard of the estate in the foothills of the Mt Pangeon. Today, the 57-hectare privately owned vineyard surrounds the modern winery, where all the wines of the estate are produced. They aim to craft wines of exceptional varietal expression and quality that showcase the best that the Pangeon ecosystem has to offer. All wines are bottled at the winery and some of them are left to age in the bottle in special aging rooms located in the basement of the winery. Sole Pinot Noir goes under a pre-fermentation cold soak for a week, followed by conventional red winemaking. When the alcoholic fermentation is completed, the wine is placed in French oak barrels where it undergoes malolactic conversion and is matured for 12 months. It is best poured cellar cool at 16-18°C. Enjoy right away or any time over the next 10 years.
