Description

On the nose, it reveals aromas of white peach, citrus blossoms, and subtle hints of honey. At the same time, pronounced minerality and marine notes add complexity and freshness. On the palate, it offers lively acidity, a crisp structure, and excellent balance. The characteristic salinity of Assyrtiko blends harmoniously with the fruity elements, leading to a dry, long, and mineral finish. It pairs perfectly with fish, seafood, oysters, and shellfish. It also goes well with citrus salads, white cheeses, pasta with light sauces, and Mediterranean dishes.

Als Winery was founded in 2018 by Yiannis Papaikonomou, Ilias Roussakis, and Alexis Kolovos. After many years of experience in the vineyards of Santorini, they created a winemaking venture focused exclusively on showcasing the local terroir. Als Extreme Terroir comes from old ungrafted vines in Imerovigli, Santorini, which grow in volcanic soils and are trained using the traditional Santorini “kouloura” method. It is then transported to Syros, where it is vinified and bottled. The name “Als” derives from the ancient Greek word for the sea and salt, elements that strongly characterize the winery’s wines. Its philosophy is based on producing limited quantities with the aim of authentically expressing the character of the Santorini vineyard.
