Rarus K is a white wine from the Kidonitsa variety. It has a pale lemon color, with a characteristic aroma of quince, sweet citrus and strong mineral elements. It is a family business based on its privately owned vineyards, firmly rooted in the plain of Nemea, where the wonderful ecosystem and microclimate of the area, combined with the clayey, fertile soil, gives the famous great wines of Nemea. Vineyard cultivation was a tradition for Bairaktaris’ family that passed from one generation to the next, learning how to care for the land and its fruits with unconditional love and affection. In 2005, however, Christos Bairaktaris decided to give a more modern form to this family tradition. This is how Domaine Bairaktaris was born. The philosophy of Domaine lies in the natural cultivation of the vineyards, as a high quality wine is based on the excellent grape quality. They follow natural vinification methods, for both white and red varieties. RARUSK goes under a special white winemaking technique to highlight the characteristics of the variety and the unique terroir of the area, the grapes are processed cold, followed by a brief cold extraction and then by a minimally invasive fermentation. The final product goes through only a slight filtration in order to maintain the character of the variety intact.
