The story begins when Giannis Carras falls in love with the Sithonia Peninsula in Halkidiki in 1963. The winery was built in 1970, and together with the vineyard became a landmark for the Greek wine industry. The 26 grape varieties grown in the estate offers unlimited possibilities for producing wines with different and special characteristics. The design and positioning of the winery in the middle of the vineyard facilitates the rapid delivery and processing of the grapes for the purpose of maintaining their quality and avoiding oxidation. Yliana is an extra dry white wine made of two distinct white Greek varieties, Malagouzia and Assyrtiko and one red vinified as blanc de noir, Limnio, compose a unique base wine. Selected yeast steams cause the second alcoholic fermentation in small independent tanks at very low pace and at low temperature. It has Bright straw yellow color with fine bubbles. Clean citrus aromas accompanied by hints of yeast and a delicate mouth with crispy acidity and pleasant finish is what makes this wine irresistible. Yliana will pair with sea food, shellfish, cheeses.
