Thalassitis Cellar Aged, due to its aging, has a golden color and the tertiary aromatic and flavor characteristics of a Santorini, without losing its high acidity and impressive freshness. Citrus fruits and peels, peach and tsakmakotra. The palate is rich, with lemon and minerality predominating. The aftertaste is long with a salty sensation. It pairs well with dishes of medium aromatic intensity, in which salty, sour or oily flavours predominate. It is recommended to pour it into a wide carafe half an hour before enjoying it.

Gaia Wines was founded in 1994 by Yannis Paraskevopoulos and Leo Karatsalos. With ammonite as their trademark and passion as their guide, they explore two top Greek varieties, Agiorgitiko and Assyrtiko, in their full range. They have established their wineries in the exceptional wine growing regions of Greece, Santorini and Nemea. Thalassitis Cellar Aged is the aged version of the classic Thalassitis, perfectly expressing the qualitative potential of the traditional white variety of Santorini, Assyrtiko. For its creation, grapes of the Assyrtiko variety are selected from vineyards of Episkopi, Akrotiri and Pyrgos, about 80 years old, with a particularly low yield, which rarely exceeds 350 kg per acre. The soil and the variety, combined with the particular winemaking process, produce a wine with a strong personality and length.
