Ktima Biblia Chora is located in the foothills of Mt Pangeon, in Kokkinochori, Kavala, in Northern Greece. It was established by oenologists, Vasilis Tsaktsarlis and Vangelis Gerovassiliou, who planted an organic vineyard there, in 1998. The estate has since grown to 570 hectares. Biblia Chora’s philosophy centers on producing premium wines that express the unique character of the Pangeon ecosystem. Sole Vidiano was planted and has adapted perfectly to the Pangeon mountainside, and includes a small amount of Assyrtiko. The classic white vinification process is used, with crushing and immediate pressing of the grapes, without pre-fermentation maceration. It is fermented at a low temperature in stainless steel vats, where it is left on the fine lees for 4 months.
