On the palate it is crisp, full-bodied and elegant, a delightful long finish and with an ideal balance of minerality and acidity. Over the years, Pascal has developed a certain style for his wines, very recognizable by its purity and elegance. Pascal creates an organic vinification, after a very light sedimentation, the fermentation of the juices is carried out with indigenous yeasts, the maceration on lees plays a fundamental role in the concentration, complexity and stabilisation of his wines. Sancerre Blanc is a wine with many distinctions, in which the expression of the terroir is accurately captured through the most important white variety of Jolivet, the Sauvignon Blanc.
