Laoudia from Assyrtiko grapes has a moderate lemon color. The characteristics of the variety and terroir are evident in the flavors and aromas of the wine. On the nose we have the distinct aromas of ripe citrus fruits, sweet aromas of flowers, herbs, honey and flint. In the mouth, balance is discernible, rich with a nice structure and strong aftertaste. Its aftertaste is long with the sensation of iodine. You could pair it with fatty fish, such as smoked eel, shellfish and meat with white sauces.

 It got its name from the local dialect of Santorini, according to which Laudia are the holes where hares rest. Alcoholic fermentation took place in amphorae using selected yeasts. It remains on fine lees inside the amphorae for about 4 months and after bottling the wine remains for maturation almost 10 months.
