Blanc de Rose Cuvee R, Thimiopoulos Vineyards 750ml

Blanc de Rose Cuvee R in the glass has the colour of amber. The nose is flooded with complex aromas of red fruit and citrus jam, peach, dried flowers, caramel, honeycomb, sage, spices and brioche notes. It is full-bodied with noticeable acidity, a slightly spicy finish and a long aftertaste. Enjoy it at 10°C alongside big fish, minced meat stews, game or even pizza.

Apostolos Thimiopoulos has dedicated himself exclusively to Xinomavro, an emblematic variety for the Naoussa region, expressing to the fullest the terroir of the area. The winery is located in Trilofo, a village near Mount Vermio. Blanc de Rose Cuvee R comes from organically certified vineyards located in the village of Fytia. In 2009 he vinified a quantity of Xinomavro which was intended for a rosé wine. The fermentation started spontaneously with indigenous yeasts, but due to a sudden drop in temperature, fermentation stopped. The wine remained in stainless steel tanks with its fine lees for 6 years. In 2015, Thimiopoulos decided to complete this fermentation. He removed 1.5 tons of semi-fermented wine and divided it into 3 barrels of 500 liters. Then in the tank he poured whole bunches of Malagouzia grapes which started a second slow fermentation for another 5 years. The wine was bottled in 2020 and remained in the winery’s cellar until September 2024 when it was released in a limited number of bottles. Blanc de Rose Cuvee R will continue to surprise us for the next 10 years.
