Rose de Xinomavro from Thymiopoulos Vineyards states its origin with the aromas of tomato being distinct. In the mouth we detect beautiful tannins (due to its stay in the barrel for about 3 months), acidity that gives freshness and tomato flavor. You could cellar it for another 2-3 years. Excellent pair with baked vegetables and pasta.

For the winery the vineyard is the connection of the winegrower and nature. The key word for them is balance in viticulture. All their vines have been grown organically, following biodynamic principles. Apostolos Thymiopoulos has dedicated himself exclusively to Xinomavro, an emblematic variety for the region of Naoussa, expressing the terroir of the region. He presents his idea by producing ten different versions of the Xinomavro variety. Each of their wines reflects the uniqueness of the plot from which it comes. The winery is in Trilofo, a village near the mountain Vermio.
