Trilogia Cabernet Sauvignon is an exuberant red wine with aromas of red currant and blackberry that blend harmoniously with notes of spices, cedar, milk chocolate and vanilla. The palette, which is typical of the variety, is rich, complex, full-bodied, with firm tannins and a long aftertaste. It is combined perfectly with veal cuts, spit-roasted meats and smoked cheeses. Ιn 2014, the Estate Kokkalis which is located in Agios Andreas in Ilia, Peloponnese, was acquired by the winemakers, Vaggelis Gerovassiliou and Vassilis Tsaktsarlis, who they created Ktima Dio Ipsi. For this red dry wine, Cabernet Sauvignon grapes are picked at the end of August. This is the oldest part of the vineyard, with a low per hectare yield of 250 to 400 kg/ha. The destemmed and crushed grapes are fermented in stainless steel tanks and aged in new French oak barrels for 15 months.
