Xinomavro Nature, Thymiopoulos Vineyards 750ml

It has a light ruby color with grenache highlights. We detect the intense aromas of vanilla, wood, ripe red fruits, such as strawberry, cherry, tomato, leather and lavender that fill  the glass. Its taste is complex with intense tannins, but without being aggressive, which blend harmoniously with the acidity and the moderate body. Red fruits, tomato, herbs and tea prevail in the mouth. You could pair it with well-cooked and slightly spicy meat.

A light and shiny version of Xinomavro. Although it is a natural wine, it does not reveal the strange character nor the very intense fruit that is usual in these wines. An extremely juicy and refreshing wine with the least possible intervention. The talented Mr. Thymiopoulos presents us an easy-to-drink and light wine without the addition of sulfite. Produced from old Xinomavro vines. Extraction for 30 days and fermentation with native yeasts. It is matured for 6 months in oak barrels and finally the wine is bottled unfiltered. The proposal of natural winemaking without sulfites by Apostolis Thymiopoulos comes from a clone of Xinomavro that was cultivated in Naoussa before phylloxera, from a single vineyard of 50+ years, between Trilofo and Fytia.
