On the palate we can taste all the aromas concentrated. It has a medium body, a subtle presence of tannins and crisp acidity, which offers freshness. Oenops Wines was founded in late 2015 by Nikos Karatzas and is the newest winery in the region of Drama. The main purpose of the winery is to produce authentic, high quality wines with minimal human intervention, both in the vineyard and in the winery. The grapes come from vineyards mainly in Macedonia, from experienced producers with an organic conscience. Thus, Oenops combines its own expertise with the experience and love of each producer for the vineyard. For the vinification, grapes are carefully sorted, stainless steel and concrete tanks and clay amphorae are used. As its name suggests, Rawditis is a ‘raw’ expression of the Roditis variety and comes from vines that are about 50 years old. This orange wine is the result of fermentation with indigenous yeasts, matured in oval-shaped amphorae for six months and bottled unfiltered with no added sulphite.
