In 1970 Yiannis Boutaris planted 40 hectares of Xinomavro vines, in Yianakohori, near the town of Naoussa. Later this vineyard will become Ktima Kir-Yianni. In 2004 Stelios Boutaris took over the management of the company and bottles the first wine, until 2006 280 acres of vines were planted. In 2009 10 more hectares were acquired by Stellios Boutaris, making Ktima Kir-Yianni one of Greece’ s largest vineyards. Today, Stelios Boutaris, 4th generation winemaker, leads his team to the next phase of the evolutionary course of the Estate, by making dynamic use of the main pillars of the Kir-Yiannis philosophy: innovation, respect for tradition and specialized knowledge about wine, from the vineyard to the final consumer. For Ramnista, grapes of the Xinomavro variety are selected manually, which allows them to achieve the desired degree of maturity of the rail. At the 2016 harvest, fermentation took place for the first time in 5 ton wooden buckets (french oak) at completely controlled temperatures. In order to enhance the color and flavor intensity of the wine, the method of steering marks and musts with an automatic piston, pigeage, is applied. The final blend was created during the 5-6 months of maturation, while the total aging time in oak barrels lasted 16 months.
