The name of this white wine, Erimitis, is due to the remote location at an altitude of 600m where the grapes come from. Therefore, the wine was fermented in small tanks and matured in barrels for 12 months. Athiktos Oinos is the new venture of the UWC of Samos, in which they follow the demand for natural wines, minimal intervention and mild vinification. They have at their disposal three different vineyards and three different vinifications which result in the creation of the Erimitis, the Profitis and the Vounitis. The word Athiktos comes from the ancient Greek verb “thigano” which means to touch lightly, wanting to denote the minimal and mild intervention in the winemaking process.
