Description

A white dry wine from Chardonnay grapes with straw yellow color. Top notes of citrus and apple, toasted and nutty, butter and minerals. On the palate we detect creamy texture balanced with freshness. The palate matches the nose with good concertation and length in a fresh and dry finish. You could pair it with pasta, oily fish like tuna or salmon, shellfish or mild and soft cheese.

From humble beginnings, Jean-Yves Devevey has developed a small but perfectly formed domaine making both red and white wines Jean-Yves Devevey created Domaine du Bois Guillaume in 1992. The vineyard extends over just over 6 hectares between Rully and Beaune. Since 2002, he has also bought grapes from neighbouring appellations which he vinifies himself. Jean-Yves Devevey has progressively established a culture which respects the environment and the individual terroir (there are no fertilizers, herbicides or chemical insecticides and a global, sustainable approach is taken to cultural practices to reduce them as far as possible). Champs Perdix Hautes Côtes de Beaune Devevey Jean-Yves is a white dry wine made from Chardonnay grapes. This vineyard is in the Commune de Nantoux. The vines are plowed 1-3 times a year and yields are limited by severe pruning and bunch-thinning. The vineyard is planted at a density of 9,000 vines per hectare on 41 B rootstock. The name of this vineyard, Champs Perdrix (Partridge Field), does not refer to the birds that might rarely visit the vineyard but actually comes from “Peillerix” in reference to the pierreux (rocky) soil. This white wine goes under Pneumatic pressing, light settling of must, slow alcoholic fermentation. Aged for 12 months in barrel on fine lees, racking, 3-4 months blending in tank. It is élevaged in oak barrels for 12 months and has a beautifully clean construction.
