Pure Santorini has a medium lemon color and aromas of citrus, in a fresh and jammy version. We detect aromas of white fruits such as white-fleshed peaches, pears and also, mineral and yeast notes. The palate is exuberant, with tremendous concentration, acidity and minerality in balance. Enjoy the wine with white meat based dishes.

Volcanic Slopes Vineyards is the smallest estate winery on the island, but it clearly expresses the individuality of the unique wine it produces. The history of the winery began in the 18th century, when the winery was founded. It was, in essence, an underground cellar, made mainly of volcanic stones. In 2013, the wine cellar was completely renovated to accommodate the VSV winery. The mind behind Pure is Mathaios Argyros, head of the Argyros Estate for many years. To create Pure, the team at Volcanic Slopes Vineyards starts in the vineyard, with selective grape sorting during harvest. In order to achieve the highest expression of the terroir, proper fruit ripeness is followed, fermentations with indigenous yeasts, minimal additions, no correction, inert ageing tanks and light filtration. A rare wine with great personality and character, produced only in “great” vintages.
