Palaiothen is aging for twelve years in new French oak barrels Limousin. During the aging process, the complex character of the product is highlighted. It has a bright yellow color and mild aromas, in an elegant distillate with a round aromatic ensemble of vanilla, wood, caramel and peach shades. The mouth is harmonious, with balanced sweetness and spicy aromas. You could enjoy it on its own or you could pair it with deserts.

Parparoussis winery was founded in 1974 and is located in Bozaitika, Patras. Their aim is to produce quality wines and to promote Greek varieties whose dynamics allow them to join the global wine palette. New French barrels are used for the maturation of their wines. Most of the wines are produced from privately owned vineyards in Movri, Achaia and Bozaitika, Patras. When it comes to distillation, they collect unripe grapes from Sideritis grape variety, with high acidity and low sugar. So, we have very clean fermentations in smells. Palaiothen is characterized as an Eau de Vie de Vin (aged for 12 years) Brandy. It has very fine secondary aromas which contributes to the creation of a fine distillate. The distillation is done in alembic with a single distillation where they separate the parts of the distillate and they keep only the middle (heart).
