Cuvée Totum is a Blanc de Blancs champagne, blend of all the varieties and plots of the Sermiers region. Tastes of herbs, notes of fruits, sweet flavors and aromas. It is also interesting that you can enjoy the champagne during a week and you will find out that it is getting more layered. It matches perfectly with white fish, meaty and oily fish, shellfish, crab and lobster.

Émilien Feneuil took over the family business in 2006 and became interested in organic and biodynamic agricultural practices. Nowadays he has organic certification, produces his own preparations and encourages biodiversity wherever he can. In 2015 he made wines from his vines for the first time. The grapes for Cuvée Totum were picked at the same time and fermented together, spontaneously with zero dosage. In cellar the must is allowed spontaneously fermented and the wines rest in barrel for about a year before being bottled for the second fermentation. After a year of riping on used barrels, the wine was bottled for second fermentation. Degorgement took place in fall of 2020, by hand.
