Description

Special Cuvée is the result of the delicate blending between harvest grapes and a majority of reserve wines, part of which have been aged in magnums for 5 to 15 years. It is made of Pinot Noir, Chardonnay, Pinot Meunier, aged for more than twice the time required by the appellation. Bollinger Special Cuvée has a golden color, with fine bubbles. Beautiful aromatic complexity with ripe fruit, spicy aromas, hints of roasted apples, apple compote and peaches. The palate is described by structure, length and vivacity, aromas of, brioche and spicy aromas, notes of fresh walnut and bubbles like velvet make a wonderful combination. This champagne will pair with any fish, sushi, shrimp, prawn, crayfish, grilled lobster, poultry, white meat, parmesan and good cured ham.

Since 1829, Bollinger has been producing great champagnes with a powerful, sophisticated and complex style. The story began with Athanase de Villermont, a great soldier who during the American War of Independence, inherited an extensive estate from his family in the Aÿ area. Then he met Joseph Bollinger and Paul Renaudin. The firm of Renaudin-Bollinger & Cie was founded on 6th February 1829. The House’s 178 hectares are planted with 85% of Grand Cru and Premier Cru vines, spread over seven main vineyards: Aÿ, Avenay, Tauxières, Louvois et Verzenay are planted with Pinot Noir, Cuis with Chardonnay and Champvoisy with Pinot Meunier . In 1911, Georges Bollinger’s British agent gave him the idea for the name Special Cuvée – “special” written the English way, without an accent.
