Ayala Brut Nature has a bright golden color with aromas and flavors of citrus fruits and notes of saltiness. In the mouth it is complex with notes of minerality, grapefruit and white fruits. It goes great with oysters, raw fish and shellfish, sea urchins, caviar, as well as Thai cuisine.

The Ayala House has been located in Aÿ, France, since 1860. Edmond de Ayala founded the house and set up a historic, privately owned winery, which still produces excellent quality wines. The 1920s were their remarkable moment, as they produced over a million bottles each year. It was also the official supplier in the royal courts of England and Spain. After World War II, Champagne Ayala lost its capacity and this pushed them to make drastic decisions. In 2005 the Bollinger family bought the winery with the intention of restoring its former glory.
